No Bricks.
Just Wheels.
Fuego started in 2021 with a borrowed trailer, a welded oak-fire grill, and a simple idea: cook tacos the slow way — over real wood — but serve them wherever people already gather. Markets, squares, ball fields, brewery lots.
There is still no restaurant and no plan for one. The truck is the restaurant. The schedule is the address.
“We plan our Saturday market run around Fuego. Al pastor first, groceries second. My kids call it 'taco o'clock.’”
— Priya N., Carbondale“You can smell the oak half a block away at Marion square. Brisket taco and a jamaica is the best lunch in three counties.”
— Marcus D., Marion“Booked them for our farm stand day — line never stopped and they sold out clean. Easiest catering call we've ever made.”
